Caramel Apple Crisp Cheesecake Bars Recipe

If you are looking for a super yummy, flavorful dessert for Thanksgiving of Christmas, this one is perfect!

Preheat oven to 350 degrees F.



Step 1
Making the Crust
Ingredients

2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup butter softened

Instructions

In a bowl, combine the flour and brown sugar. Cut in butter with a fork or blender until mixture is crumbly. Press evenly into a 9x13 greased baking pan. Bake 15 minutes until lightly browned.




Step 2
Making the Cheesecake Filling:

Ingredients

3 (8 ounce) packages cream cheese softened
3/4 cup sugar
3 large eggs
1 1/2 teaspoons vanilla extract

Instructions

In a bowl, beat cream cheese with 3/4 cup sugar with an electric mixer at medium speed until smooth. Then add eggs and vanilla. Stir to combine. Pour over warm crust.




Step 3
Making the Apple Mixture

Ingredients

3 apples, (whichever your favorite is) peeled, cored and finely chopped (about 3 cups)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Instructions

In a bowl, stir together chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg. Then spread evenly over cream cheese mixture.




Step 4
Make the Streusel Topping & Bake

1 cup brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup butter softened

Instructions

In a bowl, combine all ingredients with a fork until you have moistened bits to sprinkles over top of apple mixture.  Bake 40-45 minutes, or until filling is set.



Step 5
Drizzle with Caramel Topping



Buy any baking caramel or ice cream topping caramel, warm to room temp and then drizzle over the top of the apple mixture.

Chill and then Eat!

Ignore the corner that I cut out while it was still too warm.




I wish I would of waited longer to cut the piece out, so you can see what it looks like when chilled, all the different layers. But I was impatient and cut it while still warm so it turned into a warm melted pile of deliciousness, but not so picture pretty.
